Bourbon-vanilla is from the Indian Ocean and Mexican-vanilla is from Mexico.

Tahitian-vanilla in from French Polynesia and is derived from Vanilla-tahitiensis.

This spice's flavor comes from the seed pod (or bean) of the plant. The beans are long and thin, and a deep rich brown color.

Because of its versatility, it's the third most expensive spice in the world.
